October 2009

i am currently second day of the master cleanse. i know there are proponents and opponents of the master cleanse, but i decided, hey why not give it a try? cleansing my body might even help my transition towards veganism by ridding cravings for junk food often containing dairy, eggs, and honey. i am not doing this for 10 days, probably just 4 because i am running out of maple syrup. i am getting tons of calories from the maple syrup, so i am not going to drop dead any second. the saltwater flush kills me though! i will spare you the details.

i need to stay up late tonight to finish up a biology/ecology scientific report. usually i eat food to keep myself awake, even though it’s a bad habit. so now i am sleepy and really want food or coffee to stay awake but i can’t! will post again to see how this cleanse goes. so far i haven’t been super hungry, i just miss food since i love food.

when the deaf dream, do they hear? when the mute dream, do they talk? when the blind dream, do they see? when the hopeless dream, do they hope?

i have been watching the new season of heroes. i think it’s sooo good! better than the last season, i feel. the most beautiful thing i have seen in a while was the deaf lady making beautiful music with the cello in the park. just amazing.

halloween disneyland and california adventure documented! the hollywood twilight terror thing was SO FREAKY. holy crap! i didn’t know what to expect. my tummy went all jelly about 50 times. and lonnie got to play with his new camera!  well, me too, but obviously i took horrible shots.

coming up is the BEST RIDE EVER. i already love the haunted mansion usually, as i love all things spooky. but they revamped the ENTIRE ride to be all nightmare-before-christmassed out. firstly, i LOVE that show. ever since i first watched it many many many years ago (definitely over a decade ago). crazy obsession with it – wanted all the limited edition collectibles ever manufactured, biyi bought me a mug (which she broke before ever giving to me) and the mayor, i definitely bought a few trinklets of my own, pretty sure f4 and adeline gave me more of that stuff too. i REALLY REALLY REALLY wanted to buy zero from the disney store. it even had a light-up pumpkin nose. however, i remember that i am broke and just patted it several times before leaving. so much that a security guy started following us as he thought we wanted to steal. sorry buddy.

ooh! what a picture-heavy post. but i don’t know if you can make a cut.. so this will just be a picture-heavy blog i guess. anyway, i am sure none of us run on a dial-up connection now, so it’s not going to be a problem.

yesterday, i made a quick meal of chopped spinach and onions seasoned with garlic and paprika, as well as multigrain pilaf i got from trader joe’s. it’s microwaveable and edible after 2 minutes of nuking. well, 3 minutes for my ancient microwave.

today i made vegetable porridge, which is really just a variety of brown rice cooked in vegetable broth, spiced with a bunch of dried herbs, and i added an edamame vegetable blend in. plus a side of morningstar’s hickory bbq ribs which were superrr yummy!!!

i am behind on accounting again! but it’s really my favorite class this year.. especially since i just got a perfect score on the first midterm. my asian math genes have not failed me. am deciding if i should go to arclight hollywood for a free viewing of paranormal activity (I LOVE SCARY SHOWS SO MUCH) or out to the row and the 9-0 like the typical usc girl. jackie and i have been lame and we haven’t partied since the weekender in san francisco.but yayyy it’s the weekend! i know it’s only thursday, but i am in college after all : )

ok, enough of depressing talk. look what lonnie surprised me with!

jackie and i like it a lot.. it’s a cheery addition to the room. although the helium is all gone and it’s hanging upside down now.

i tried baking in the horrible oven again. it’s a gas oven from the 18th century, so i don’t really know how it works. i usually bake it for about 1/2 the time stated on the instructions. the texture of my cakey stuff usually comes out weird, i don’t know if it’s me or the oven, because i usually pick the recipes with good reviews.

chocolate mint cake with mint frosting

chocolate mint cake with mint frosting

chocolate mint cake

ingredients:
1 1/4 cups flour (i used all-purpose)
1 cup sugar (trader joe’s brown sugar)
1 tsp baking soda (do i really have to change it every 30 days or is its lifespan longer if refrigerated?)
1/3 cup unsweetened cocoa powder
1/2 tsp salt
1 cup warm water
1 tsp vanilla extract
1/3 cup vegetable oil (the oil was floating so i poured a little out..)
1 tsp apple cider vinegar
extras: 1 tsp peppermint extract (i did not taste any peppermint in the cake though)

instructions:
1. preheat oven to 350 degrees
2. mix together flour, sugar, cocoa, baking soda and salt with a fork in pan. make sure it’s really blended.
3. add water, vanilla, oil, and vinegar. mix till very blended and scrape down the sides.
4. bake for about 30 minutes or till knife comes out clean
5. cool completely before frosting

mint frosting

ingredients:
2 cups powdered sugar (it was 1 cup and then i added more to get the desired consistency)
1 tsp peppermint extract
2 tbsp rice milk

instructions:
1. mix all ingredients till smooth, add more or less milk/sugar till desired consistency

the cake was not as sweet as i like, and i would prefer it with a lighter (but still densey), moist texture. i like my cakes pound-like. this seemed a little dry and bland. : ( i liked my frosting though.. probably cos it’s all sugar. and i definitely didn’t wait for the cake to cool completely before frosting. well after refrigerating it, it turned out rather nicely with all the sides covered by frosting (i took the picture right after i frosted it, so it looks melty but i still think it looks cool).

jackie and i went to my very first pumpkin patch on friday night! we picked out our respective pumpkins and carved them yesterday evening. it’s my very first jack-o’-lantern : )

my pumpkin!!!

my pumpkin!!!

mine took forever! it was bigger so everything was tougher and took a lot of energy. plus i didn’t think about the rounded patterns being hard to carve. we did everything with kitchen knives btw! and my pumpkin had about 200000 seeds and was all pulpy. we kept some of the flesh and the million seeds so we can make yummy things next week. i’m thinking of pumpkin muffins, pumpkin cookies, and pumpkin garlic soup.

i’ll be taking another set of pictures when we get tealights to put inside! we already placed them on our porch.. hopefully no drunken college asshole destroys them because i will be a very angry girl. i’m going to disneyland later with the boy! i’m excited for the halloween decorations. i really wanna buy zero (jack skellington’s pet), it’s so cute and has a light-up nose!

since this is a new chapter in my life, i have decided that i should be more open and honest. even though these are things i would not like to advertise to people, i see no reason why i should try to hide anymore. i am in serious financial trouble. it’s not as bad as someone living on the streets, or starving in the third world, but it’s bad enough for me.

1. tuition fees. i chose to go to a school with the most exorbitant fees ever. of course when i picked the school, i thought i could afford it. but disaster struck, and i got stuck with a semester of unpaid tuition. that was sophomore fall semester. the school then threatened to kick me out (in the most diplomatic way of course) spring semester if i could not pay the overdue balance by the registration deadline (usually 3 weeks into the semester). with no way of coming up with the money, i lost all hope and stopped going to class the 3rd week of school. however, i received an email from the collections department saying that i could continue this semester. yayyy! i was sooo happy and grateful and determined to do well.

sophomore year ended. i was still stuck with 2 semesters’ worth of fees. after a long, hard, and stressful summer, a private loan covered that overdue balance for me to register for junior year (this semester) right before school started. here i am again, desperately needing and finding enough money to pay USC what i owe so that i can register for spring classes, before i start worrying again.

making things even harder is my international student status – i have to find an eligible U.S. cosigner for any private loans with banks. with the economy now, the probability of that happening has dipped near zero. none of my family members are eligible for loans back in singapore either.

i’m not saying i am a model student. i’m not the brightest, the most hardworking, or the most creative. but i try. i’m double majoring in two things i am very interested in, and as cheesy as it seems, i really do want to make a difference. i want to heal mother earth, or at least comfort her by telling her in my own ways that there are people like me who care about her. i want to be a cat and dog lady and adopt all the cuties without a home. i want to live comfortable and repay all those who have helped me so much – my parents, my friends, and even once-strangers who have hearts of gold.

maybe some may argue i don’t have to graduate to accomplish what i want. well, i WANT to graduate because it would help me and my goals a lot more. and if i don’t continue school year, i would have to return. it’s not that i hate singapore – it’s that i have already established another life here. i like studying here infinitely more than i did in my years at home. i have my friends, my boyfriend, my routine. my family and my old friends, i do miss them. but really, how many of them are still left in singapore? my friends are scattered all over the world, it matters not where i am, we are likely to be apart physically anyway. the ones that matter, we all know we will reunite again some day.

2. laptop. after my accounting midterm on a friday afternoon (yup i love getting tortured like that), i came home, ready to relax with a beer (see, i am honest) in front of my laptop. as i was opening the bottle, my clumsy hands knocked over the fullest, most ginormous cup of water onto my laptop. it was dripping water from the insides after. fear not, i have one more year of warranty left. perhaps if it dried, i can fool Apple into believing that it died on its own terms. alas, that was not to be. the clever engineers detected that molecule of water in my macbook. the repairs were priced at $750. WHY would i pay $750 for a 2-year-old macbook running on Tiger OS when a new one costs $999? well, that aside, i don’t have $750 anyway.

thankfully, lonnie (my bf) has an extra laptop. i appreciate this as it did save my life academically (i had 1048193813 things to do this past week). however, it does present numerous problems, including but not limited to: suddenly deciding not to be able to connect to the internet, restarting by itself, occasionally refusing to close programs or open programs or restart simultaneously (i.e. being useless except being able to move the mouse around and clicking on things but nothing ever happening), and playing very bad quality video and sound (usually continuous stuttering or pausing and then stuttering). see, the last part wouldn’t be that bad except that i take my accounting class ONLINE. this means i have 4-6 hours of lecture to watch every week. like right now, i am supposed to be watching a lecture. but i really cannot understand my professor with such video quality.

hence, i started writing this post. plus there is loud music playing next door, and people on various instruments (drums, i think i detect a saxophone, and also singing) across the street. WELL I JUST WANT TO WATCH THE 10 HOURS OF ACCOUNTING THAT I NEED TO CATCH UP ON.

3. other. yes i have applied to various scholarships. i received a few the past 2 years. most recently, i was chosen as the USC recipient for a scholarship from LAAPA (los angeles alumni panhellenic association). but came this debacle – i couldn’t afford to stay in my sorority house which costs a whooping $10,000 a semester. although it included 15 (hardly edible, especially for a vegan/vegetarian) meals a week, it is technically covering only 8 months and you are not allowed to stay there for holidays, such as spring break, thanksgiving, and winter break. and that sum is excluding dues. this would not have been so much of a problem if the sorority house was full. but it wasn’t, and so everyone is required to live in a minimum of 2 years. i already spent 10k living there for a year, i wasn’t about to spend precious money that could go to my education. i wasn’t alone (8 other girls chose not to or could not afford to stay in the house). although it was evident that the last thing the chapter needed was losing 8 girls, nationals was being a bitch about it and basically said we were not committed to the sorority. this is despite our president fighting for some of us to stay, and our personal emails to the national president explaining our situation. i even said that my commitment goes as far as paying for the dues even though that was a serious stretch for me.

well long story short, we were dismissed. that’s fine – my sisters will always be my sisters. but because i am no longer greek, LAAPA had to withdraw that scholarship.

i don’t know why i typed this here. i just needed to put it out there i guess. not many people will be reading this, and even if they do, i know in all their best interests, do not have the capacity to help me. all i can do now is to work hard, do all that i can, and pray for the best.

i am going to carve my very first pumpkin this evening! i will be putting all that fresh pumpkin flesh to good use in the next week. so excited! i’ve only used pumpkin once – a butternut squash – but i don’t remember the dish at all. yummy pumpkin foods soon..!

aww look at our new addition to our home! jackie got her from the pound! she’s a pitbull (mixed..?) about 4 months old. sprinkles came in all skinny at 19lbs but she is gaining weight fast. lucy, the other puppy living here, and sprinkles have learnt how to play.. although sprinkles is about 4 times lucy’s size. i found a mama cat with 4 kitties at the side of our house too. bought some cat food last night for them because i have been stealing sprinkles’ dog food to feed the hungry mama cat.

this blog will be the start of a new journey, hopefully in more ways than one.

firstly, i will be documenting my transition from vegetarianism to veganism – i have been working on that for a little while now. may my written words motivate me further!

secondly, i just like to talk. to myself. sometimes to my roommate, jackie. maybe i started this blog so i wouldn’t bore her ears off.

finally, i want to try out more things in life. both randomly and in depth. i wished i had my camera cables, my colorsplash, my polaroid so i can take pretty pictures. amongst other things i want to do. and go on adventures! i went to Knott’s Scary Farm last sunday. that was definitely an adventure for me. i scream. a lot. and get scared easily.

welcome to my life!
